I baked lots of pumpkin cookies tonight. I'm going to take most of them to work, but that means I get to snack on them there whenever I like.
My mother invented the recipe for a contest (Oh, it's Libby's Libby's Libby's on the label label label) when I was in high school. She didn't win, but we loved the result. They look like something the cat sicked up, but they're delicious; she used to make them for me to take to my SATs to eat during the break.

Mama Michels’ Pumpkin Goodies
½ cup margarine or butter
1 ½ cup sugar (you canprobably get away with less)
1 egg
1 cup canned pumpkin
1 tsp vanilla
1 ½ cup flour
1 cup rolled oats
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 cup chocolate chips (or more!)
1/3 cup shredded coconut (I use sweetened)
Preheat oven to 350. Cream margarine and sugar. Add pumpkin, egg, and vanilla. Mix the dry ingredients and add to the pumpkin mixture. Add chocolate chips and coconut. Bake about 12 minutes.
Of course you can vary this as you like--nuts would work well, and while I'm not a fan of raisins they might also fit. Or take out the coconut, etc. Feel free to disseminate and vary, but if you do please credit Mom...
