Wow.
I baked a double batch of cookies tonight, to take to work. And discovered something amazing.
I thought my little cookie scoop was the best thing going--like a miniature spring-loaded ice cream scoop that saves me so much fiddly work and smears. But I've found something else.
Parchment paper.
Why didn't I know how much easier it made baking cookies? No mess--in fact, I can lift all the cookies off the pan at once to start cooling. No burnt bits left behind.
No ineradicable stains on my brand-new, expensive, "non-stick" cookie pans.
Yes, it's wasteful, and I can't even recycle the paper as my apartment has no such facilities. But I don't care, and it is biodegradable.
And the cookies are pretty good, too.

The cookie scoop is amazing...also in the realm of Where have you been all of my cookie baking life? silicone spatulas...not the lift the cookie off the tray kind but the scrape the bowl kind.
ALSO! Just read last night for consistent cookie shape, to scoop your dough and then chill before baking...haven't tried that one yet, but it sounds interesting.

Huh. Well, if I had room and if I cared enough about cookie size, I might try that. But generally I'm doing well if I get them reasonably spaced.

I have to admit, my obsession in the kitchen is spatulas, bowl clean and flipping, kind. I have one really old one, I think we've had it from since we first met, that I prefer over every other one in the drawer. I've gone through 2 dozen bowl cleaning kind and my dog ate the one I loved. I wanted to beat her with the handle!!

It's funny how one can fall in love with tools. My mother has knives that are older than I am.
